Chips please!

If you are like me and loooove chips but dont love all the calories and fat that come with them there is a healthy alternative! I see this everywhere...KALE CHIPS! They are surpringly delicious and healthy!


*1 Bunch of kale
*few sprays of Olive oil non stick spray or if you prefer 1 TBSP olive oil. Olive oil adds calories and fat BUT all healthy fats!
*Pinch sea salt



Another favorite!

Some days...Like today...I like to come home from work and be able to eat in 10min or less! I love Birds eye lightly sauced steamfresh Pasta. Just pop in microwave and throw a little ezekial tortilla with some light swiss cheese and some vegetables (I like to put some tomato, zuchinni and Red onion) on it. Delicious!

Fiber One!



A healthy Diet needs Fiber! I eat lots of fiber throughout the day and Fiber One products make it easy to get my daily amount and everything is delicious! I Love their bars, especially Oats and Peanut butter and Oats and Caramel! As well as their Cereals...Fiber one Original,(60 calories 1/2 cup and 1g of fat!) Caramel Delight and and brand new 80 calorie honey squares! 80 calories for 3/4 cup and 1g of fat! Can't beat that! Yummmmm!

Pancakes please!

I looooove to make pancakes on my days off and of course, have to be wheat! I use 1/2 cup hodgson mill whole wheat buttermilk pancake mix with 1/4 cup Silk unsweetened milk, 1/4 cup All whites and 1 TBSP flaxseed meal! Top it with some blueberries and some sugar free pancake syrup...YUMM-O! (With a glass of chilled green tea) =]

Quinoa Fruit Salad!


Made my first Recipe with my ingredient of the week and Absolutely shocked myself! It was delicous and filled me up! Quinoa Fruit Salad! Got the idea for the recipe on  Tasty Palettes. 

I changed it up a little and added some romaine lettuce in it as well and I used an apple, strawberries, green grapes and blueberries as my choice of fruit. On the side I added a middle eastern flatbread I got at my local trader Joes. =]

Ingredient of the week...Quinoa!


Quinoa(pronounced keen-wah) is something I have been meaning to try for a while now. It is actually a seed and related to the spinach family. When cooked, quinoa is light, fluffy, slightly crunchy and subtly flavored. It actually cooks and tastes like a grain, making it an excellent replacement for grains. Some of the nutrients quinoa include:

  • Complete protein. Quinoa contains all 9 essential amino acids that are required by the body as building blocks for muscles.
  • Magnesium helps relax your muscles and blood vessels and effects blood pressure. Quinoa contains high levels of this vital nutrient.
  • Fiber. Quinoa is a wonderful way to ensure that you consume valuable fiber that eases elimination and tones your colon.
  • Manganese and copper. Quinoa is a good source of these minerals that act as antioxidants in your body to get rid of dangerous cancer and disease-causing substances.

3 Day weekend!

Excited to have a 3 day weekend! Got to catch up on some sleep...finally! Woke up and I was starving...decided to make myself some whole wheat oatmeal peanut butter banana pancakes and they were delicious! Got in my morning kick boxing workout and going to enjoy a relaxing day watching Supernatural.

-1 Cup quick Oats
-1/2 Cup whole wheat flour
-1 Tablespoon baking powder
-1/4 tsp salt
-1 cup almond or soy milk. (I used Silk pure almond unsweetened)

Topped with 1/2 a banana and 1 TBSP of Better n' Peanut butter low sodium

Loooong day but Yummy food!

Got up at 7am to get ready for work and I was already craving my Natures Path cinnamon waffles! I decided to add some blueberries on top along with the maple syrup and half a banana sliced up on the side. It was De-licous and filling!




Work was extremely busy and exhausting...by the time I got home I couldn't wait to eat a good dinner and watch some Supernatural so I turned to my favorite salad ever! Strawberry Basil Pasta salad! Great recipe I found on KERF. I had some middle eastern flat bread I found at trader Joe's on the side. =]


-3/4 cup whole wheat Blend Pasta-Penne Rigate(Ronzoni Healthy Harvest)
-2 tablespoons of Basil Pesto
-3 Fresh Basil Leaves
-1/4 cup white kidney beans(cannellini)
-1/4 cucumber-Sliced
-5 Medium strawberries-sliced
-3 leaves of fresh Romaine lettuce

Better n' Peanut butter!




I made my regular trip to my local Trader Joes and found the amazing Better n' Peanut Butter! I love peanut butter and Jelly sandwiches or my apple slices dipped in peanut butter but peanut butter is so high in calories and fat. Healthy fats of course, but it wasnt fitting in to my diet. This stuff has 85% less fat, 40% less calories! 2 TBSP has 100 calories, 2g of fat, 4g of Protein and 2g of Fiber. I bought the low sodium product and made myself a peanut butter and Jelly Sandwich to curve my cravings and oh how amazing it was!

I Only Used 1 Tbsp of peanut butter(1 Tbsp was plenty for me) with 1 TBSP of Smuckers Simply Fruit in Apricot and for my bread choice my ultimate favorite, Oroweat Double Fiber Bread.

Calories: 230, Fat: 3g, Fiber: 13g, Protein: 10g, Sugars: 13g

Waffles, Waffles, Waffles!!

I absolutely Loooove waffles! A delicious, fast breakfast...who could ask for more?! I love Natures path! Organic waffles which means no artificial preservatives, additives or genetically modified organisms (GMOs) and the ingredients are not grown with toxic pesticides, chemical fertilizers or fumigants. Great price and they have a variety of flavors(my favorite being Maple Cinnamon!) 2 Waffles has only 180 calories, 6g of fat, 4g of protein and low sugar!
